Yesterday I received the best afternoon pick-me-up, better than a Starbucks cappuccino or a chunk of dark chocolate…
I am so excited and feel so blessed to have the opportunity to join a group of strong, inspiring, and motivated women! As seen on the Fit Approach website, “Sweat Pink Ambassadors live the Fit Approach mission every day: they sweat hard, play hard, and inspire those around them to achieve their best selves.”
All of my excitement powered me through 1 + 1/2 TNT sessions last night. Ryan was late because he had to get an MRI that took longer than expected, so I happily stayed behind with him to make-up what he had missed. By the time we got home I was ravenous and raided the kitchen, snacking while I threw together the epitome of a kitchen sink salad.
veggies + TJ’s chicken & veggie dumplings
I also had an unpictured bowl of chicken noodle soup and rice cakes topped with cottage cheese [hunger > pictures]. I could not be stopped and finished off the night with a sweet cereal yogurt bowl for dessert.
Surprise, surprise, this morning I served up a stack of cereal pancakes. Today’s cereal of choice: TJ’s Honey Nut O’s!
honey nut pancakes topped with plain Chobani + unsweetened coconut + pistachios + honey
P.S. While I was busy packing Ryan’s and my lunches for today, Charlie was also busy… He ate the peanut butter filling and left me the pretzel shell, he’s so kind

Question: Do you have a favorite chili recipe?
Question: Have you heard of the term flexitarian? Do you associate yourself as a flexitarian?

I love love love TJ’s veggie dumplings!! I never thought of putting them in a salad! YUM
I hadn’t bought them in a while and forgot how easy and delic they are! I also like them with a sprinkle of parm + black pepper… Super easy!
oh my gosh that melty peanut butter looks so amazing. one of my favorite snacks is a muffin warmed up with a scoop of peanut butter on top. nothing melts quite like pb!
That sounds delic! I have a few muffins at home, I’ll have to try it
Congrats on becoming an ambassador! how exciting!
and I’ve heard of flexitarian but aren’t’ one of them. I would say my Mom and Dad are though! Well, at least when I’m at home and make lots of vegan dishes!
Thanks so much girly! Have a wonderful weekend
Why are you such a pancake genius? Why? Please make me pancakes. And extra pistachios please.
Bahaha I wouldn’t take it that far but I’ll graciously take ze compliment! I need more pistachios too, we ran out dangit!
sweat pink!!! love it, congrats! to celebrate, come fix me some pancakes when you feed cait! haha
Thanks girly! I’d be happy to make y’all a stack of ‘cakes!
Ah! You already know I’m so happy for you! Welcome to the SPA team
P.S. your little one is ADORABLE! I wanna cuddle with him.
Thank you, thank you, thank you! He is a cutie patootie most of the time
CONGRATS on becoming a Sweat Pink Ambassador!! Fit Approach is an organization I admire greatly; you’re going to be a huge asset to them!
I’ve been thinking about applying as well, but haven’t yet filled out the form. Maybe I’ll do that this weekend!
Your cereal pancakes look amazing! I love the idea of adding a bit of crunch to the batter–yum! If I were to make these, I think my cereal of choice would be Cinnamon Toast Crunch, and I’d top the pancakes with lots of whipped cream and cinnamon roasted pecans/walnuts. Mmm.
The food travel kit blows my mind! Could you imagine whipping that out on an airplane? Forget peanuts; I’ll take mini marshmallows, coconut, sprinkles, m&m’s aaaand popcorn thankyouverymuch.
Have a wonderful weekend! xoxo
Haha, I can totally see myself packing one of those survival kits for my kids in the future and accidentally “forgetting” to give it to them and having to eat it myself
Omg, please tell me that is mustard and ketchup on your salad! I LOVE doing that! And now I really want to try those chicken dumplings!
That travel snack kit is GENIUS!! All you need is to swing by a fro-yo shop and you’ve got all the toppings you need (and you’ll save a TON on the weight of your bowl!) Lol
And I’m seriously dying over the SPAM ad! Gah, I still can’t believe I grew up on that stuff!
It’s actually mustard + salsa + hot sauce [still tomato based]! LOVE the combo on salads and veggies
And that is a brilliant idea to use the travel snack kit as a fro-yo kit… GENIUS!
