WIAW: Peanut Butter Chocolate Pancakes {Recipe}

Yesterday’s personal day was super productive.  I dusted and I vacuumed.  I washed and I dried.  I organized and I rearranged.  I baked and I cooked.  I ran and I supported.  And on top of all of that, I successfully fulfilled not just one, but all of my cravings as advised by the Elf for Health challenge…  And evidently I was craving lots of peanutty, potatoey, and pizzafied items 😛  Remember those frozen sweet potatoes I found at TJ’s?  I cannot. stop. eating. them.

Peanut Butter Chocolate Pancakes


  • 2 tablespoons white whole wheat flour
  • 2 tablespoons peanut flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon stevia
  • 1 teaspoon baking soda
  • 2 egg whites {or 1 whole egg}
  • 2 – 4 tablespoons water


  1. In a bowl, add all of the ingredients and whisk until the batter is smooth.  Note: I add the dry ingredients first, then the wet ingredients.
  2. Spray a medium-sized skillet with non-stick cooking spray and place over medium heat.
  3. For each pancake, spoon 2 generous tablespoons of batter into the pan.  Cook each pancake until a few bubbles form and burst, approximately 1 to 2 minutes.
  4. Flip the pancakes with a spatula and cook until browned on the underside, 1 to 2 more minutes.
  5. Serve the stack of ‘cakes with your favorite toppings and enjoy!

P.S.  Today is National Oatmeal Muffin Day [I don’t make this stuff up]…  I already dug into a delicious stack of pancakes [obvi] when I found out, but maybe I’ll have some dessert style oats for dinner?

Today…  #elf4Health 12/19 Day 24:  Bake cookies!  I can’t reveal what I made because I’m sending them to my Secret Santa blend but I did taste test [to make sure they’re not poisonous or anything] and think they turned out pretty tasty!

Tomorrow…  #elf4Health 12/20 Day 25:  Make a casserole for dinner tonight.  Hmm, a pizzafied casserole?  Mexican casserole?  Tuna casserole?

  1. Now I know why we’re blends… you make delicious foods! Pancakes and rice cakes? A girl after my own heart. Looks like a pretty productive day to me! I mean, when cookies are involved, how can it not be? 😉

  2. All of this food looks amazing and is making me hungry. I have never made a casserole before but I always enjoy them when someone else makes one! I’ve been craving sushi like no other and luckily I am going out for sushi tonight :)

    • Agreed, PB + chocolate is one of the best combos! Mmm, that sounds delic- Ryan and I both love quinoa and TJ’s chicken sausage, that would be great for a chilly evening…

  8. YAY for having a productive day LOL. I feel like everytime I say I’m going to take a productive day…it never really is and I don’t remember what I did during the day ha ha.

  9. I love those days where I get to eat everything I’m craving! 😀 Lately I’ve been craving sushi, cookies and fro yo. I’ve satisfied my first two cravings, but I still haven’t had fro yo recently. I need to do that!

    I don’t know what I’m doing for the casserole challenge tomorrow either! I’m thinking maybe a pasta bake of some kind…

    • Aw, boo, sorry girl! I hope you’re feeling better… I started feeling a bit under-the-weather on Wednesday and it felt like it hit me like a ton of bricks yesterday. Hoping it’s nothing serious, it’s the best time of the year!

  13. Those pancakes look beyond delicious. And those rice cakes look really yummy too, although I NEVER would have thought to top it with sweet potatoes. Weird combo, but I’m definitely intrigued :)

I ended up doing a tonne of cooking, baking, and cleaning today too, and while it sounds like a bunch of chores, dare I say it was actually ridiculously satisfying? Nothing like knocking a tonne of things off the old to-do list – it’s almost as enjoyable as hitting cravings on the head. Lately I haven’t been able to get enough bananas, yogurt, applesauce, cinnamon, and almond butter. I’m actually starting to get a little bit worried because I’ve been craving these things for MONTHS now and it doesn’t look like they’re going away. Oh well. If it’s not broken…

    • Completely agree, if it ain’t broke, don’t fix it! I’ve been digging dessert style oats for dinner lately- so easy, sweet, and satisfying after a day at work and a sweaty workout :)

  17. aaaaand i’m definitely making those pancakes stat. i love chocolate peanut butter and i know your pancakes will never fail. your meals look awesome. i’m so glad you got to take a personal day, those are so necessary sometimes. i’m able to be SO much more productive on personal days than i am on weekend days for some reason. no idea why but it’s nice.

    • Agree about how wonderful chocolate + PB are together and agree about being more productive during the week than the weekend. On the weekends I have started to embrace vegging out and would much rather sit on the sofa than vacuum 😛

  19. I saw those frozen sweet taters and I’m glad to find that someone liked them..at first glance they kinda skeeved me out. Now that I know I may have to try them!! This looks like a great day of eats, and I love your pizzafied salad! Being productive is one of the best things ever..ever.

    Also, it’s becoming more clear than ever that I need (1) peanut flour and (2) whipped cream in my life. haha. #2 is lack of memory and #1 is difficulty finding — but pancakes and whipped cream ARE in my near future. I promise. 😉

    • You can do no wrong with peanut flour! We don’t usually have whipped cream on hand but we’ve had it since Thanksgiving and I’m not complaining 😉
