MIMM: Almond Butter & Cajun Shrimp

I’ve got a big dose of optimism pumping through my veins this week because there are just a few days that stand between me and the open ocean, lots of sand, and a week full of wonderful memories in the making.  That all sounds quite marvelous don’t ya think?!  But before looking forward, let’s take a glimpse back into yesterday and today which have been quite marvelous too…

Marvelous…  Sleeping in until 8AM.  That’s unheard of in these parts.  I’m usually up and out of bed by 6AM, walking Charlie, sipping a cup [or two, or three] of coffee and making breakfast…  No complaints though, extra hours of zzz’s are always appreciated.

Marvelous…  Playing around with sweet potato pancakes.  A new recipe, a sweet way to begin the day.  They were delicious and pie-like with a super moist center and crisp around the edges.  Sorry I said moist, I know some people are totally irked out by that word.  Oops, I said it again.

Marvelous…  Running 9 miles.  Every weekend the distance is getting a little bit longer and my running confidence is getting a little bit bigger.  Right now, time doesn’t matter.  What matters is that I finished the run injury free and I enjoyed every mile of it.

Marvelous…  Post run fuel.  There’s not much more satisfying than a tasty meal after a sweaty workout.  I was ravenous and in the mood for something fast.  This was my first slather of almond butter and… it tasted like almonds.  I’m not sure what I was expecting, it was good and I’ll happily eat it by the spoonful, but my heart pitter-patters for peanut butter.

Marvelous…  A mani and pedi.  After a spa pedicure with an extra long message and a shellac manicure, nails are looking spiffy for the sand.  Cajun Shrimp by OPI has been a longtime favorite.

Marvelous…  Strawberries.  An afternoon snack of plain Chobani Greek yogurt + cinnamon + Trader Joe’s O’s + pistachios + strawberry slices.  Piled high and full of sweetness.  We had a blast picking apples this past fall and I’d love to pick my own berries sometime this spring and summer.

Marvelous…  Visiting Ryan’s grandparents.  I always enjoy swinging by their house.  I didn’t grow up with grandparents, mine all passed away when I was very young, so it’s a new experience for me.  They’re always so excited to see us and want to know what’s going on in our lives.

Marvelous…  Simple, yet satisfying, dinners.  Since Ryan’s ankle surgery, we’ve eaten 80% of our dinners on the sofa so he can keep his foot up.  I occasionally miss eating at the table, but there’s something so relaxing about sitting on the couch, under the blanket, and watching a silly show.

Marvelous…  Pearly whites.  Waking up for a 7:15AM dentist appointment on a Monday is just cruel.  I’ve never been a fan of the dentist, the sounds in particular, and finding out I need to go back for a few fillings doesn’t make me any more of a fan.  One plus, the dentist thinks that I’ll do well with the express package aka very easy and noninvasive.

Marvelous…  Making dinner and entertainment reservations.  One pitfall of procrastinating is that many things are already booked.  Oh well, we still will be seeing at least 3 shows [maybe more if they become available on board] and we made 2 dinner reservations for restaurants other than the main dining room.  Next, we need to look at the shore excursions.

Marvelous…  Ryan packing his meals.  Since I snuck out before the crack of dawn this morning I didn’t have a chance to pack Ryan lunch.  But to my surprise, he ate at home versus out when he swung home to take care of Charlie.

  1. can I just say you make me feel normal? i know that is vague but whatever, i just love reading your down to earth posts that always make me laugh. once I have your cooking skills I will be set for life. Nice job on that nine miler, I had no doubt you would rock it. Now we just need to run together, I am going to hold you on that.

  2. i had literally the exact same reaction when i first tried almond butter. i don’t know why i was surprised that it tasted like almonds but i was. i think that’s because peanut butter tastes so much…better…than regular peanuts to me, so when almond butter tasted so much like almonds i was a bit disappointed. that being said, i LOVE it in oatmeal – but i never use it to slather on things. that’s strictly reserved for peanut butter. oh and cajun shrimp is my favorite OPI color. it’s my go to during the summer months.

  3. OH no about the cavities!! Sounds like they are small though. I love getting my teeth cleaned! :) I’m so stinking excited for you and this cruise!

  5. I agree with Alex- I love how “normal” your life is. Nothing fancy- no crazy odd meal concoctions, weird workouts, super fancy events, or anything that makes you like wayyy above us ordinary folks. It’s refreshing to read about people I can relate to. Is it weird that I actually kind of enjoy the dentist? Cause I do. Maybe it’s because I’ve been really lucky to avoid fillings or any strange procedures besides braces.

    • You are one of very few who I’ve met that likes the dentist! I don’t think that’s neither bad nor weird… If anything I’d say you’re lucky!

  6. I’m so jealous you slept in until 8:00! I can’t even remember the last time I did that!

    What kind of almond butter did you use? I always thought AB was kind of “eh” until I tried Barney Butter and it converted me into a total AB lover.

    The highlight of my weekend was a tie between the Wine and Food show and meeting Sam from Better with Sprinkles! :D

  7. Everything sounds marvelous indeed! I’m especially a fan of the fact that you tried almond butter. Although that stuff is ridiculously addicting, I still have a soft spot in my heart for peanut butter as well :)

  8. Ahhhh I slept till 8:30 yesterday!! We win!!! And these are all marvelous things for sure, especially that run and post run food!! I can’t wait to see what you guys do on your cruise :)

    I don’t like or eat shrimp, but I sure do like that nail polish color. I’ll have to be on the lookout for it!

  11. Ooh! Your cruise is coming up! Exciting! I go back and forth between peanut butter and almond butter. I LOVE Justin’s Vanilla Almond butter but don’t eat it that often since it has added sugar. I tend to eat the Maranatha almond butter from Costco because it’s cheap, good and super creamy! Marvelous from my weekend was a girls trip to Sonoma (wine country)! So fun!

  12. I know what you mean about sleeping in being a rarity. I’m usually up at the crack of dawn myself and I -really- wish I could manage to get more z’s… especially on the nights I don’t end up going to sleep until 1 or 2! And as an avid AB lover, it makes me sad that your first taste didn’t blow you away :( I’m not crazy about a lot of the ones out there, but roasted almond butter is amaaaaazing. Pick up a jar of Maisie Jane’s if you ever come across it… that one is just… swoontastic :D

    • It gets worse… I didn’t write the recipe down [never do, shame on me] and I cannot remember it! I’ll have to get back to the drawing board ASAP!

  15. I had a dentist appointment yesterday too! I am jealous you got starbucks after though… The dentist always annoys me. I hate the scraping and the gritty feeling of the polish. I am a huge fan of Almond Butter (AB < PB sorry) And I am currently out… NOT GOOD! You should try it on a sweet potato, it is amazingly delicious! So jealous of the cruise. Cruise dinners were mt favorite. I love sit down 3-4 course meals in which you get to take your time and savor every bite and the company that comes along with it!

  18. Holy crap that text message. So flipping cute. Love it! 9 miles?! YOu ROCK woman. Love seeing that smiling face. Oh OPI and their colors. Cajun Shrimp FTW….though what could EVER top Wooden Shoe Like to Know?! ;) ummm that dinner looks amazing. What are those crispy things on the top? Fish sticks? I love eating dinner on the couch. So relaxing, I definitely do it whenever I eat at home. Glad you’re exploring my couch world :)

    • Yeah, they’re fish sticks! A new TJ’s find for us… Tasty :) Cajun Shrimp is my warm weather go-to and Wooden Shoes Like to Know is def my fave fall into winter shade!

  20. I love everything about this post–I basically just want to be you for a Monday. Do you think we could do that? I’d be really good about eating delicious pancakes, getting a mani/pedi, and rocking 9 miles. Just think about it. ;)
