Switching It Up [Whole Wheat Salsacakes]

So today I thought I’d switch things up a bit…  How about a What I Wore Wednesday?!

What I wear when I wake up…  Fuzzy Shrek-like slippers, courtesy of Steve Madden.

What I wear to the gym…  Typically stretchy pants and a tank-top.  I received these yesterday from pv.body [my first pink package].

Who am I kidding, I can’t do a WIWW post!  I live in slippers and stretchy pants, regardless of whether it’s morning, noon, or night.  Unless I’m at work and then I manage to put on a dress or a skirt.  I commend all of y’all who can do fashion posts, but I’ll stick to sharing my Pinterest fashion finds ;)   Moving onto food…

While Charlie oftentimes will choose chicken for breakfast…  I much prefer pancakes.

At first bite I wasn’t all that enthralled with almond butter, but after devouring this breakfast it may have redeemed itself.  Despite being the the crunchy variety, it’s still super creamy and makes for a perfect coating all over the pancakes.

I used this recipe but added strawberry preserves into the mix.

Peanut Butter and Jelly Oatcakes topped with peanut butter frosting and a slather of almond butter and a spoonful of strawberry preserves.

Snacky style lunches are my favorite.  They take little effort to put together at the crack of dawn and they allow me to have a little bite of everything- crispy and crunchy, savory and sweet.  Side note: I heart VitaTops but VitaCakes are itty-bitty and gone in 2-bites, which leaves me wanting more.

Fresh fruit and veggies, yogurt, a turkey sandwich, crackers, and a mini VitaCake.

I’m not entirely sure what to call this, but by the time I ate it as my afternoon snack all of the cereal had absorbed the milk-yogurt mixture and it reminded me of bread pudding…  Berry Good Cereal Pudding?!

different varieties of cereal + TJ’s Very Cherry Berry Blend + a mixture of Silk light soymilk and plain Chobani.

As if my pancake obsession couldn’t get any more predictable, brinner was what was for dinner.  But this time I switched things up and made my first batch of salsacakes, inspired by this girl’s comment on my breakfast pancake picture posted on Instagram.  I was blown away with how tasty they were and cannot wait to try making more savory styles in the future!

Whole Wheat Salsacakes

¼ cup oats

¼ cup white whole wheat flour

1 teaspoon baking soda

2 eggs [or ½ cup egg whites]

2 tbsp- ¼ cup water

a spoonful of salsa

*use less water for thicker pancakes, more water for thinner pancakes*

Directions

1.  In a bowl, add all of the ingredients and whisk until the batter is smooth.  Note: I add the dry ingredients first, then the wet ingredients.

2.  Spray a medium-sized skillet with non-stick cooking spray and place over medium heat.

3.  For each pancake, spoon 2 generous tablespoons of batter into the pan.  Cook each pancake until a few bubbles form and burst, approximately 1 to 2 minutes.

4.  Flip the pancakes with a spatula and cook until browned on the underside, 1 to 2 more minutes.

5.  Serve the stack of ‘cakes with your favorite toppings and enjoy!

P.S. Since I had a double dose of pancakes yesterday, I switched things up this morning and tried my hand at stuffed french toast.  One word: heavenly!

  1. ya this all makes me realize that I need to a. learn to cook or b. move in with you. I may have to go with the latter for feasibility reasons. ha.

  2. those salsacakes – i want to make those immediately. i wish i didn’t already have dinner planned out for tonight (having people over for dinner so i’ve got stuff prepped already) but i think i will be making pancakes for dinner thursday. i’ve been craving them for far too long!

  3. Your pancakes always sound so good! I need to actually follow through when I say I’m going to make them. For some reason, it’s so intimidating for me and seems so much harder than just throwing some waffles in the toaster but they’re not that hard! Also love that yours make more than like 1/2 a pancake. Nomz. I like a big stack, thank you very much.

  4. Oh my, you are KILLING me with all of your pancakes & stuffed French toast… I miss all the crazy creations I used to do. I like that you make your pancakes with oats though. I may have to try making some that way eventually. ;) Stuffed french toast & strawberry preserves in the pancakes or FT are the bomb. Yum! Wish this laptop has smell or taste-o vision or something.

    I dress pretty preppy at work. Is always a dress and cardigan or skirt and top. On the weekends, you’ll find me in Lululemon pants or jeans and a sweater. Comfy!

  6. I live in yoga pants and sweat pants paired with sweatshirt and mocassins. If I have to go somewhere I’ll change as soon as I get home. Haha!

  7. Not going to lie – the idea of savory pancakes sounds super strange to me, and I have no idea why since I’m a big fan of savory oatmeal and savory waffles. Salsa and avocado, though… oh man could I go for some of that right now. Mexican is my weakness for sure. And girl I LIVE in stretchy clothes, and if I had slippers like that you can bet that I’d be living in those too.

    PS – I’m secretly super stoked that you’ve warmed up to AB ;)

  8. WOW I love savory so those salsacakes sound SOOOO cool! I feel like it’s like nachos but with pancakes instead of chips. But I LOVE crunch of chips, so maybe I’d have to burn my cakes :D

  9. huh, those salsa cakes are an interesting idea. Also, I LOVE your slippers. And I would try maranatha creamy ab, or any of Justin’s flavored ab. I’m pretty sure I really dislike TJ’s almond butter.

  15. Hahaha, I love you, and your WIWW attempt ;) adorable! The tastiest thing I’ve made recently were cinnamon pancakes this morning for breakfast…hit the spot perfectly! And simple, casual clothes are what I’m all about…preferably yoga/running stuff since it’s light and comfy ;)

  16. Haha! Your slippers are hilarious! As a stay at home mom, I live in my workout clothes! I put them on, workout, shower then put on clean workout clothes. Some days I get dressed but not all that often! With my Paleo challenge I made a cauliflower fried rice the other night that was delicious! I actually prefer it to regular fried rice!

    • I would love to try cauliflower rice [or pizza crust] but it’s on my list of foods to avoid for the time being :( Staying away from coniferous veggies is killing me…

  18. I am always a fan of the comfy variety. I am also lucky enough to be able to wear jeans to work every day. It makes me feel so relaxed and laid back. I think I get more work done because of that.

  22. I love topping whole wheat toast with avocado and salsa, so I can only imagine that those toppings would be equally great on pancakes. Thanks for sharing the idea :) .

    At first bite, I was not an almond butter fan. But now I LOVE it. I think it is definitely something that is a bit of an acquired taste, especially if you are just used to eating peanut butter.

  24. I just got a Keurig recently and I’m absolutely in love with it! It’s so convenient to be able to make coffee for myself. I just bought some flavored creamer for the first time and I can’t wait to try it out, haha.

    • Yup! They’re just as tasty as the VitaTops… But I don’t think you’ve been missing out on much, I strangely suspect it’s just the deep chocolate VitaTop recipe cut in half :P
