Went Bananas

Believe it or not – I haven’t had pancakes for breakfast the past 2 mornings.  And believe it or not – I’ve enjoyed the change, but it wasn’t out of my own will…  I’ve had to fast after dinner to prepare for my 8AM doctor’s appointments so breakfasts have been on-the-go.

Tuesday morning I had a HIDA scan [pumped with IV contrast to look at how my gallbladder functions] and this morning I had an abdominal ultrasound.  Neither of the appointments were all that unpleasant and they didn’t take as long as expected – double bonus!  As I mentioned the other day, any news is good news at this point and I’ve got news to share…

2:20 Hospital

I spoke to my doctor’s nurse this morning and after reviewing the results from both my endoscopy last week and the two procedures this week, everything looks a-ok [with the exception of the swelling of my stomach] – wahooo 😀  My doctor is supposed to call back later today to discuss what the next steps are, but it’s definitely a relief to start ruling things out!

Moving onto tastier topics, Tuesday’s eats.  I don’t have any exciting new recipes to share – my eats have been pretty bland, whatever my stomach can handle – but I hope to get back into the creative cooking groove soon.  Evidently I went bananas on Tuesday…  Either I was cravinggg potassium or I unconsciously felt the need to eat as many of the 16 bananas I got for $1 over the weekend.

Thanks Jenn over at Peas & Crayons for hosting another tasty link-up!

2:20 Breakfast

a banana, chunky Teddy Peanut Butter stuffed pita with raisins [reminded me of Peanut Butter & Co.‘s Cinnamon Raisin Swirl but a bit saltier – yum] , & a caramel cappuccino from Starbucks

2:20 Lunch Bag

grazed throughout the afternoon

2:20 Lunch

fresh veggies, grapefruit slices, plain Chobani, Garden Lites veggie souffle, original popchips, & a mini VitaCake

2:20 Snack

an apple, light string cheese, & Joe’s O’s + pistachios [are the bestios]

2:20 Dinner Salad

veggie-filled salad

2:20 Dinner

dessert oats – cottage cheese + hazelnut Torani syrup + multigrain hot cereal + Kashi Go Lean + banana chocolate chip VitaTop

2:20 Dessert

rice cakes topped with a banana + dark chocolate chips

P.S.  Thank you all for your advice, comforting words, and wisdom the past few weeks.  I honestly cannot express how truly grateful I am for your continued support and for listening to my health hiccups…  Y’all are the best!!!

Question:  What’s your favorite fruit?

Question:  What’s the tastiest thing that you’ve made this week?

Whatcha Think?

  1. frankly i don’t listen to your health hiccups i just scroll around looking for pictures of pancakes and charlie. that’s what i’m all about. and i am sorry for being rude about the rice cakes – they actually do look mildly tasty when covered in banana with chocolate chips. perhaps i will try that sometime when i want something that reminds me of eating cardboard. yum.

  2. Bahahahha Molly’s comment! That girl has some sass on her 😉 She always makes me crack a smile.
I’m glad you’re slowly starting to rule things out. Obviously not having pancakes is a sad day but the vitacake looks delicious. Is that funfetti?! Oh, and I’m glad I’m not the only person who likes peas- they’re so tasty!

  3. I hope everything gets figured out asap!!
    Great meals babe!

  4. I hope you get everything sorted out! I love peas, snacking on frozen peas and adding then to salads still frozen is so good!

  5. Oh dear, I’m glad that the tests weren’t too horrid! (I’m HORRIBLE with hospitals/doctors/nurses/anything medical) You’re food looks delicious! VitaTops (or in this case, VitaCakes) are one of my FAVORITE ways to settle my never-ending chocolate craving. Have a good day!

    • I don’t mind doctor’s but don’t do well with needless… It’s taken me many, many years to not cry [but sometimes I still shed a tear, ha]! And I loveee VitaTops – especially the chocolate flavors 😉

  6. Bananas are THE FRUIT of this weeks WIAW!! Those rice cakes look DELICIOUS!!! Hope all went well today girl! Thinking of you! xoxo

  7. As THE BIGGEST BANANA LOVER on the planet, I’m glad I’ve found my soulmate. :)

    • Haha I don’t know if I’d go that farrr – they have to be perfectly golden brown with light brown spots – but I will say that this week has got me wondering why I don’t eat them all that often…

  8. Mmm my fav fruit are blueberries! I love apples, cherries, and grapes too :) and the tastiest thing I’ve made it either my mediterranean chicken or my oats…they’ve both been good!

  9. Bananas will always be my favourite fruit…and I’m slightly (read: very) jealous that you got 16 for $1. Holy bananas.

  10. Glad all the results came back a-OK. The waiting game can totally be a pain… esp. if you are as inpatient as me, Ha!

    Favorite Fruit: Apples.

  11. Yay! I’m so glad to hear that everything is looking okay from the tests you had so far! Hopefully your doctor will be able to come up with something that will offer relief soon :) And holy.wow do those dessert oats sound amazing… I usually add bananas to my oats to give them flavor and sweetness, but adding syrup sounds like a brilliant idea. And speaking of bananas… those are definitely my favorite fruit. I usually eat around 2 a day, and if my stash drops below 3 bananas in my fruit basket, I get a little nervous…

    • I have yet to add a banana to my oats – I’ve sliced them on top, but never have added one while cooking… Mmm cooked bananas – I now have a big craving for bananas foster 😛

  12. 16 bananas for $1!!! Sounds like a fun challenge to me! Hang in there . . . I’m sending positive thoughts your way, that you will know more about what’s going on very soon. :)

  13. It is good to hear that you got some good results from your tests. Hopefully the doctors can better address your issues more fully, though!

That banana is one RIPE banana…which is saying a lot coming from me because I like them pretty brown ;).

LOVE the looks of that salad. One of my absolute favorite salad toppings is peas. So, so good!

  14. glad your endoscopy looked normal!

  15. Love the look of that breakfast and I’m totally going to try putting cinnamon and raisins on regular PB now!

  16. I love raspberries and blackberries…probably a tie for my favorites! I’m glad you got good news from your test results! PHEW! your eats seriously looked delicious! :)

  17. That banana and chocolate chips on the rice cake looks so yummy right now.. I am eating lunch and am craving something sweet.. It will have to wait until dessert tonight though. Thanks for sharing, girly!

  18. yummy, those dessert oats look like a great after dinner treat. i love popchips too, but i haven’t tried vitatop muffins!
