I’m not ashamed, it tasted.so.good – pumpkin should be more than just a fall flavor 😀 Surely I could have added a handful of spinach to my eggs but I packed a spinach salad for lunch and knew that there would be many veggies consumed during dinner… Anddd there was plenty green going on in the background – a complete 360 from Monday’s snowy surprise. Dare I say, spring has sprung?!
