Breakfast Without the Green

It’s the last WIAW of March and I failed to incorporate any green into my breakfast yesterday, but I did enjoy…

I’m not ashamed, it tasted.so.good – pumpkin should be more than just a fall flavor :D   Surely I could have added a handful of spinach to my eggs but I packed a spinach salad for lunch and knew that there would be many veggies consumed during dinner…  Anddd there was plenty green going on in the background – a complete 360 from Monday’s snowy surprise.  Dare I say, spring has sprung?!

  1. Yum! You’re breakfasts always look so good! I need to get up a bit earlier so I can actually make a meal!

  3. You just can’t go wrong with Vans waffles. They’re delicious. And the protein ones actually keep me full. It’s a miracle!

  4. Those pictures are gorgeous.. and your breakfast looks delicious. Why is it we feel “guilty” if there are no greens in our breakfast? I feel that way almost everyday–and I need to stop it! I just need to say, “Sorry I’m not sorry there are no greens in my breakfast!!” :)

    • I don’t feel guilty for not eating greens with breakfast since I eat so many veggies with lunch and dinner, I don’t think my stomach could handle it… As long as you’re eating what you want, not what you think you “should” have!

  5. Cold! Haha i’m ready for warmth please! And sometimes I’ll have veggie scrambles for breakfast, but it’s been awhile since i’ve done that…usually save veggies for lunch and dinner :)

    • Same – veggie scrambles are one of my fave easy dinners and it’s always a treat when I’m at home to make them for lunch… I don’t think it would stay well if I made one for lunch at work :P

  8. Three servings of veggies before lunch? Yikes. I’d better make a plan for that one. It’ll probably be a veggie-laden omelet … maybe with a side of toast and TraderJoe’s less-guilt spinach-kale-yogurt dip.

  10. I usually see greens as a lunch or dinner thing…once in a while I’ll throw a handful of spinach in a breakfast smoothie, but other than that I need my sweet, non-veggie breakfasts!

  11. I was going to say that the snow sure disappeared fast from your neck of the woods! Sadly, we’ve still got more than enough over here, but hopefully a few days of sunshine and warmth will fix that. As for greens for breakfast… I find it kind of blasphemous :P Greens don’t show up in my diet until lunch or dinner.

    I pretty much never eat vegetables in breakfast other than pumpkin. I need sweet food in the mornings!

  14. Wow! It looks amazing! Especially the beautiful setting :-) I love pumpkin puree but don’t use it nearly enough! I have some homemade stored in the freezer that I need to use up! Yum!

  19. Sometimes I’ll get green in my breakfast with a green smoothie..or possibly an omelot with green peppers and broccoli, but lately I haven’t been feeling veggies in the morning. I get them in for lunch and dinner though so I’m not that worried about it!

  20. We can make pumpkin an all-year-round flavor if we want to. :) I mixed some with tofu and pineapple Chobani this morning and it was DELICIOUS.

  21. Gorgeous pictures! I think pumpkin can be eaten ANY time of year….like now since I just finished a snack with some in it! hehe I always have a green with breakfast…I can’t get enough of them! Usually just a side of some kind or stuffed into some eggs!

  22. Obviously I love breakfast foods like pancakes and waffles, but since I have been treating breakfast like a regular meal and eating protein and veggies, I can stay fuller way longer than if I just ate oatmeal or something. It takes some getting used to but is worth it.

    • A good balance of carbs + protein + fats definitely helps to keep me fuller longer versus a bowl of cereal… Although I do love a snack of cereal later in the day!

  25. What a beautiful breakfast, and BEAUTIFUL view!! I love these photos!! Pumpkin is most DEF a year round flavor for me. I made some pumpkin donut bites last month and they were delicious!! Along with some pumpkin oatmeal muffins last week!
