Favorite Finds: Cinnamon Chia Pancakes {Recipe}

First, thank you all for your supportive messages yesterday!  I can’t express how much I appreciate your support and hearing your stories about how you’ve found or are still finding your right fit.  Change is not always a bad thing.  It can be scary and overwhelming, but some of the greatest things in life wouldn’t happen if it wasn’t for change.  I was nervous to share my story because I wasn’t sure how others would respond, but I know what I need to do and I’m confident about my future plans.

10-11 The Serenity Prayer

The past couple of days I’ve had a pounding headache that comes and goes and nothing seems to make it go away.  This morning I woke up absurdly early (the current trend is waking up at 2:30 – 3:30 a.m.) so I took advantage of the time to whip up a new pancake recipe (egg-free becuase we desperately need groceries) and catch up on our DVR…  I think I’ve developed a new obsession with the TV show Scandal.  Kerry Washington, the lead actress, was a great commencement speaker at The George Washington University’s ceremony this past spring, but she’s an even better actress.

10-11 Cinnamon Chia Pancakes


1.  In a bowl, add all of the ingredients and whisk until there are no clumps in the batter.

2.  Spray a medium-sized skillet with non-stick cooking spray and place over medium heat.

3.  For each pancake, spoon 2 generous tablespoons of batter into the pan.  Cook each pancake until a few bubbles form and burst, approximately 1 to 2 minutes.

4.  Flip the pancakes with a spatula and cook until browned on the underside, 1 to 2 more minutes.

5.  Serve with your favorite toppings and enjoy!

Mini Pumpkin Cheesecakes with Gingersnap Crusts by Life Made Simple


Tonight Ryan and I have a “fun date” to a local emergency care center so I can get a TB skin test because I need one for substitute orientation next week.  Did you know that there’s a nationwide shortage of TB skin tests?  I called over a dozen centers before I found one, phew!

  1. Your pancakes sound delish! I’ll have to pick up that baking mix next time I’m at Trader Joe’s. I typically use Kodiak Cakes mix and you don’t need eggs for that one. I love ALL of your favorites and I think that pig is the cutest little animal I’ve ever seen!

  3. I got really hungry for some pumpkin after reading this! I haven’t ever made pancakes without eggs! My usual mix is 3 egg whites, 1/3 cup oats and 1/3 cup cottage cheese!

    • I almost always add greek yogurt or cottage cheese on top of my pancakes but I’ve never tried mixing it into the batter… I’ll have to try that soon!

  4. I love every.single.thing in this post…well, except for the whole glue an orange rabbit butt to my elbows! 😉 The quotes, the food, the flowers, ahhhh visual stimulation overload! 😯 And I want that piggy!

    I’ve been going back through a lot of my old recipes since I’m still plugging away a spring…er, fall cleaning around the blog…I forgot just how many vegan pancakes I used to make back in the day. The only reason I got out of it was that I just prefer my cakes to be SO FLUFFY I COULD DIE!!! which is hard to do with flax or chia…but I DO have a few tricks I want to try. Have you ever added seltzer water or club soda to your cakes? I heard it really puffs them up!

    • These were fairly fluffy I gotta say, but that also could have been because it was a premade mix. I’ve never tried adding club soda to the batter, but have heard that people do it with cake and cupcake mixes!
