WIAW: Details in the Descriptions

Yesterday was one of those days when you look at the clock and it says 9 a.m. and within a blink of an eye it says 5 p.m.  I have a big project for LWC (Life with Cancer) that I’m working on – it’s not hard, just tedious – so doing research for that made my day fly by.  Let’s dive into my Tuesday eats…  Since I was so focused on my work yesterday, I forgot to take pictures of all of my eats, whoops!  That said, there are more details within the descriptions.

Breakfast:  Pancakes, again.  No surprise.  Cinnamon Raisin Pancakes topped with TJ’s European Plain Nonfat Yogurt + crunchy peanut butter + 30-Second Cranberry Jam with grapefruit slices and a cup of Apple Caramel Pie coffee.

I know that this is cheating (two breakfasts in one WIAW post), but this morning’s breakfast was too good not to share.  I’d say that it was the best breakfast that I’ve eaten in a while…  Golden Delicious apple slices, 2 sunny side up eggs topped with chunky salsa, maple turkey sausage links, and an English muffin topped with 30-Second Cranberry Jam + Pecorino Romano cheese.

Tip: I don’t like runny egg whites (the slimy texture grosses me out), I typically prefer over easy eggs, but this morning I tried a new tip and it worked!  I cooked the eggs until most of the whites were cooked, added a splash water to the pan, and put a lid on it for approximately 1 minute.  Voilà, no runny whites!

Mid-Morning:  When Ryan left for work I made my way over to Caribou Coffee and stayed for about 3 hours.  Free WiFi is a dangerous thing…  Although, I did purchase a medium skim cappuccino that cost $3+ so theoretically I suppose that I paid for my coffee and each hour of internet that I used?

Lunch:  Between Caribou and lunch, I went to our apartment gym and did a 30-minute incline walk + upper body weights.  Incline walking is no joke – it’s a great low-impact form of cardio and you can really feel it in your quads, hamstrings, glutes, and lower legs!  I may look like an old woman while doing it, but my legs and rear have really “benefited” from it.

If you follow me on Instagram, you saw this picture last week…  BBQ sauce is one of the most used condiments in our house – it’s Ryan’s #1 and I’d say it’s my #2, second to mustard.  We use it as a marinade for chicken, mixed into pasta dishes (cold and hot), on top of burgers and sandwiches, as a dressing on salads…  It’s a great mix of salty + sweet flavors.  For lunch I had carrot + celery sticks, another grapefruit, a BBQ ham + cheese sandwich, and a handful of Kettle PopCorners.

Snack:  The rest of the afternoon consisted of work, work, and more work.  My appetite tends to go haywire when I’m sitting down working for long periods of time so between lunch and dinner I snacked on a mozzarella cheese stick, some raisins, an orange (citrus overload!), and a bag of Brown Bag Popcorn mixed with a handful of Van’s Honey Nut Crunch Cereal.

Dinner:  Around 5 p.m. I called it quits and took a trip over to Wegmans because our fridge and pantry were looking bare.  I planned on making a “real dinner” but Ryan got stuck at work (until almost midnight) so I decided to postpone my plans until tonight.

I remade the same dinner as Monday which included unpictured spicy sauteed green beans (so easy, so good!), lentils with 2 over easy eggs + chunky salsa, and a cheesy English muffin.  Evidently English muffins are my doughy carb of choice at the moment – I love the nooks and crannies!

Dessert:  Last night I tuned in to The Biggest Loser and  it was an awesome episode.  Call me crazy, but I think it would be awesome to workout with Jillian Michaels.  I’d probably regret ever saying that within the first 5 minutes, but still.

While watching The Biggest Loser, I ate a bowl of cereal with Silk Seasonal Nog and it was heavenly – I highly recommend swapping out the milk in your cereal or coffee with this nog, you won’t regret it!  About an hour later I wasn’t satisfied so I capped off the night with a Snickerdoodle Skinny Cow Ice Cream Sandwich.  Thankfully, The Biggest Loser was over by then becuase I know Jillian would not have approved of my double desserts.

Question:  Would y’all be interested in my 30-Second Cranberry Jam recipe?  I don’t know if it’s just me, but I love cranberries this time of year – I’ve already made it 3 times in the past 2 days.

Question:  Lentils – yay or nay?

  3. AHH I don’t watch a lot of TV, but TBL is the ONE show I watch religiously and I HAD NO IDEA it had started. SHOOT I am so behind! HAH. Your meals all look so yum, and I love your computer wallpaper.

  4. YUM on so many things! the lentils, eggs, and salsa look delicious, and of course your pancakes always make me drool! I love the idea of the nog in place of milk, and I adore cereal so I’m sure I’d like this. Only thing I’d pass on all day is the ham (not a fan) – but other than that, please just feed me :) . I’d love the recipe for the cranberry jam!

  5. Ahh my pancake loving friend, it’s been too long since I’ve made one of your recipes! Might just have to surprise Joe with them tomorrow :) and English muffins are the best…we go through a pack a week in our house

    • I hadn’t had an English muffin in a while but my first bite brought back delicious memories – my momma loves English muffins with peanut butter, she eats one daily!

  6. love lentils!! I buy the pre made ones from trader joes and add them to my salad for staying power. I like the idea of eating them with eggs though!

  7. Can I have what you are having for breakfast pretty please? Man oh man, does that look delicious. That is what I dream about before I wake up and then I settle for oatmeal (not that I’m complaining because I love oatmeal), but I definitely need to have some more pancakes in my life.

  8. If given the option, I’ll always always take English muffins over regular bread — especially if we’re talking cinnamon raisin <3 Have you ever gone the cream cheese and jam route? SO good. But cheese is always a good choice as well.

    And girl, you're not alone in the snack monster showing up as soon as you're sitting for long periods of time. I can never sit and study or work on the computer without having plenty of munchables to get me through.

  10. hahaha I watched biggest loser while eating dinner last night, too! What did you think of the cheating scandal?! And I would LOVE your cranberry recipe! I have some in the fridge just waiting to be devoured.

    • Since I haven’t been waiting it religiously this season, I don’t know the whole story but I trust Jillian’s judgement so I think what she did was okay – she said it had no more caffeine than a cup of coffee.

  11. I just saw cranberries at WF the other day and it really hit me that it’s the holiday season. I know a lot of people love them, but I can’t remember the last time I ate them. Buuuuuuuuut…if someone shared a quick and easy recipe, maybe that would change my mind! ;) Hint, hint…

    I often have trouble eating legumes- pity because I used to love lentils!

    • Haha, thanks Arman! I’ve heard that some people have trouble with legumes… Maybe lentil soup (if they’re slightly mashed) would be easier to eat?

  14. I love legumes but unfortunately legumes don’t love me back. Whenever I eat them I get the worst stomach pains. I am seriously drooling over your dinner though and want to eat it anyway!

  15. Since you say you suffer from IBS, I’m surprised you would purchase and drink Silk Nog – it contains carageenan, which is known to badly irritate the digestive track. It is a thickening agent used in many dairy replacements and low/non fat yogurts to make them creamier. It doesn’t necessarily irritate you immediately after having a product that contains it, but it can worsen inflammation/irritation in your digestive track in general.
