WIAW: Spinach Stuffed Shells

This morning didn’t go as planned.  Nothing bad happened, but nothing went how I envisioned in my head last night.  I planned to wake up, eat breakfast, write this post, go to BodyPump, stop by the grocery store, and indulge in leftovers from last night.

But instead…  I woke up, ate breakfast, made breakfast for Ryan, and then took a “nap.”  Are they called naps in the morning?  Or should I just say that I went back to sleep?  Oh well, I’m pregnant – that’s my excuse.  When in doubt, blame it on the baby because she’ll never know.  I’m kidding.

After filling up my gas tank {getting stranded on the side of the road is a real fear!}, I managed to go to the gym for 50 minutes of cardio and enjoyed a large plate of  spinach stuffed shells when I got home.  I suppose the day hasn’t been a complete wash, although I have no idea what I’m going to do after I publish this post.  Maybe I’ll see Melissa McCarthy’s new movie, Tammy.

While on summer break, I’ve been trying to make an effort to make/create new recipes.  Some days my stomach has been wonky and all I’ve wanted to eat is carbs  and drink ginger ale #pregnancyproblems, but yesterday’s eats didn’t disappoint.

Question:  Do you like stuffed shells?  I’m either experiencing an intense pregnancy craving or this is my new favorite recipe!  I typically don’t care for leftovers, but I ate them for lunch today and probably will have them again tonight for dinner.

Question:  What myths have you’ve heard about how to lose cellulite?  Dr. Oz just came on and that’s today’s topic.  By the way, his props are always so cool.  Mad “props” to whoever creates them ;)

  1. Egg wafflewich = genius! It’s leading me down the road of thinking up more savory waffle sandwich recipes. Why did I think they always had to be topped with sweet things?! You have opened up a whole new world to me :P Those stuffed shells look absolutely amazing so thanks for linking the recipe! I want to try and start bringing leftovers for lunch because I’m getting bored of sandwiches.

    And honestly, it’s just one of those days. I’ll be skipping the gym and taking a nap myself, so at least you still made it there! Hump day slump day for me! :)

  2. I love stuffed shells! I just made them not too long ago :)

    • This was my first time making them and we loved them – fresh out of the oven and leftovers! I’d love to try stuffing them with other mixtures, too.

  4. I don’t even eat cheese or meat, but those stuffed shells made my mouth water. So did the waffle sammich with those pretzels. Sometimes pretzels are so simple, but SO satisfying!!

    • Pretzels are easily one of my favorite snacks. I could eat a whole bag in one sitting… Assuming I have something to drink becuase they’re so salty :P

  5. Your eats look tasty! I’d say you must most definitely be craving carbs! Maybe it’s a pregnancy thing? Either way, it’s making me want some too. ;)
    Saw part of the Dr. Oz cellulite thing… interesting! I find some of those “solutions” hard to believe, but who knows?!

    • Ehhh, I’ve always loved carbs so it’s nothing new… But I am LOVING salt more than usual. I laughed at some of the “solutions” some of the women mentioned trying haha!

  6. I’m a type A and always have a hard time when things don’t go as planned! I really need to learn how to just “go with the flow” and stop worrying so much about sticking to my plans! Your eats all look SO yummy! Right up my alley! I didn’t eat stuffed in years! I might try your recipe soon, though.

    • I’ve definitely loosened the reigns over the years and have become more “go with the flow,” but sometimes it’s hard when things don’t go you had hoped they would.
