WIAW: Cinnamon Vanilla French Toast {Recipe}

The trend has continued – a WIAW[ednesday] posted a day late.  My intentions are there but my follow-through is…  Missing.  Whomp, whomp.  Nevertheless, my eats recently have been tasty thanks to a few new products and combos :)

Thanks Jenn for hosting another tasty link-up!

Cinnamon Vanilla French Toast

  • 2 egg whites
  • 1/4 cup Silk Light Vanilla Soymilk
  • stevia *to taste*
  • cinnamon

Whisk all of the ingredients in a medium bowl.  Dip individual slices of bread into the batter to coat each side.  Cook for approximately 2 minutes and flip to cook the second side for another 1-2 minutes or until light brown.  Stack and serve with your favorite toppings!  Makes about 3 slices.

topped with cottage cheese + TJs High Fiber Cereal + Earth Balance Crunchy Coconut & Peanut Spread + TJs Super Fruit Spread

served with green grapes

7-3 Lunch Veggies

a very green salad & a ruby red grapefruit

7-3 Lunch

Avocado Chipotle Wrap

whole grain wrap stuffed with spinach + bell pepper strips + TJs Chipotle Pepper Hummus + sliced avocado

served with TJs Inner Peas + TJs Ginger Cats

7-3 Snack

3-Ingredient PB&J Trail Mix

TJs Joe’s O’s + lightly salted peanuts + raisins

*you could substitute any favorite cereal, I just used what we had in the pantry*

served with apple slices

quick cooking tip: nuke the sweet potatoes in the microwave until tender before tossing them into a greased skillet

7-3 Dinner

The Fluffiest Scrambled Eggs

1 whole egg + 1 egg white + 1/4 cup cottage cheese + a dash of salt & pepper

Whisk all of the ingredients in a medium bowl.  Pour the batter into a greased pan and cover with a lid so the eggs can cook through.  When the eggs appear to be set on the bottom, fold in half like an omelet and cook for another minute on each side.  Serve as is or top with a shot of hot sauce + salsa [added after the picture].

served with a salad, sweet potatoes, & avocado toast

P.S.  I hope that y’all have a fabulously fun, safe, and tasty 4th of July!

WIAW: Wafflewich For the Win

It’s wa-wa-Wednesday!  I’m not sure why, but I’ve been in the best mood all week.  Maybe my endorphins are still flowing like crazy from Sunday’s race?

4-30 Charlie

Speaking of flowing, do y’all remember the group TLC? Rumor has it they’re getting back together!  I personally was a bigger fan of the boy bands back in the day [N'Sync, specifically Lance, swoon] but I also enjoyed singing about Waterfalls…  Go, go, Jason Waterfalls.

Haha yes, I shamefully admit that for the longest time I thought they were singing about a man named Jason Waterfall.  Humor me and someone please tell me that you did too?!

Let’s keep things flowing and move onto my my eats from yesterday.  Holy YUM, yesterday was apparently a day full of salty + sweet and lots of tastiness – I ate at least one thing at every meal that made me wonder why I haven’t eaten ___ before.  All new eats are noted with an asterisk* :)

Thanks Jenn for hosting another tasty link-up!

I grew up drinking Folgers brand because my dad was a big fan, but nowadays my heart belongs elsewhere – the best part of waking up is Starbucks in your cup!

4:30 Breakfast

TJ’s frozen Very Chery Berry blend, egg whites stuffed with mozzarella cheese + Canadian Bacon*, & a TJ’s Cranberry Orange Bran Muffin smothered with honey

4-30 Lunch

fresh veggies, Kettle Brand Bakes Sea Salt Chips, a banana, & a CranBran VitaTop*

wafflewich* FTW [for the win] – dijon mustard + mashed avocado + honey smoked turkey sandwiched between Van’s Waffles

apple slices & an Odwalla Super Protein Bar

4-30 Dinner

veggie-filled salad, Williams-Sonoma butternut squash puree* [served as soup], & avo tuna salad* on top of rice cakes

rice cakes topped with cocoa cottage cheese + dark chocolate chips

Question:  What’s the tastiest thing you’ve eaten recently?

Question:  If you had to choose one, would you choose N’Sync or the Backstreet Boys?

Went Bananas

Believe it or not – I haven’t had pancakes for breakfast the past 2 mornings.  And believe it or not – I’ve enjoyed the change, but it wasn’t out of my own will…  I’ve had to fast after dinner to prepare for my 8AM doctor’s appointments so breakfasts have been on-the-go.

Tuesday morning I had a HIDA scan [pumped with IV contrast to look at how my gallbladder functions] and this morning I had an abdominal ultrasound.  Neither of the appointments were all that unpleasant and they didn’t take as long as expected – double bonus!  As I mentioned the other day, any news is good news at this point and I’ve got news to share…

2:20 Hospital

I spoke to my doctor’s nurse this morning and after reviewing the results from both my endoscopy last week and the two procedures this week, everything looks a-ok [with the exception of the swelling of my stomach] – wahooo :D   My doctor is supposed to call back later today to discuss what the next steps are, but it’s definitely a relief to start ruling things out!

Moving onto tastier topics, Tuesday’s eats.  I don’t have any exciting new recipes to share – my eats have been pretty bland, whatever my stomach can handle – but I hope to get back into the creative cooking groove soon.  Evidently I went bananas on Tuesday…  Either I was cravinggg potassium or I unconsciously felt the need to eat as many of the 16 bananas I got for $1 over the weekend.

Thanks Jenn over at Peas & Crayons for hosting another tasty link-up!

2:20 Breakfast

a banana, chunky Teddy Peanut Butter stuffed pita with raisins [reminded me of Peanut Butter & Co.‘s Cinnamon Raisin Swirl but a bit saltier – yum] , & a caramel cappuccino from Starbucks

2:20 Lunch Bag

grazed throughout the afternoon

2:20 Lunch

fresh veggies, grapefruit slices, plain Chobani, Garden Lites veggie souffle, original popchips, & a mini VitaCake

2:20 Snack

an apple, light string cheese, & Joe’s O’s + pistachios [are the bestios]

2:20 Dinner Salad

veggie-filled salad

2:20 Dinner

dessert oats – cottage cheese + hazelnut Torani syrup + multigrain hot cereal + Kashi Go Lean + banana chocolate chip VitaTop

2:20 Dessert

rice cakes topped with a banana + dark chocolate chips

P.S.  Thank you all for your advice, comforting words, and wisdom the past few weeks.  I honestly cannot express how truly grateful I am for your continued support and for listening to my health hiccups…  Y’all are the best!!!
