WIAW: 2-Ingredient Creamy Italian Dip {Recipe}

You know what’s awesome?  Today’s weather.  It’s been too long for me to even remember the last time I took Charlie for a long walk.  So this morning after Evie and I got back from Stroller Strides we all went for a walk around the lake.  It was picture perfect.

My last WIAW post was a photo dump of what I ate over the past three months aka how to eat with a newborn.  Taking pictures of my food has taken a backseat to taking pictures of my baby, except yesterday.  Yesterday I took just as many pictures of my food as of my baby.  Well, almost as many.

This recipe comes from my mom – she makes it almost every time people come over for dinner and I’ve started to do the same.  It’s SO simple, it’s not really a “recipe,” but guests frequently ask how to make it so I have to share.  This 2-Ingredient Creamy Italian Dip is zesty, pairs perfectly with veggies for a tasty appetizer, and is a lighter alternative to traditional ranch dips.


  • 1 packet of Italian Salad Dressing Mix
  • 1 16 oz container of light sour cream {full fat sour cream or Greek yogurt also work}


Pour salad dressing mix into sour cream.  Stir and serve with veggies.

a bed of lettuce topped with chickpeas + steamed frozen veggies + Cheddar Goldfish  + a sliced sweet potato & a drizzle of BBQ sauce


cinnamon oatmeal topped with Trader Joe’s Peanut Butter Filled Pretzels + a spoonful of peanut butter + a splash of milk

Question:  Ranch – yay or nay?  Eh, I’m more of a mustard girl.

Question:  Would you like to see how I made the most perfect hard-boiled eggs?  I combined a few tips and made half a dozen over the weekend.  Hard boiled eggs are a great thing to prep ahead of time for a fast snack!

WIAW: Cinnamon Vanilla French Toast {Recipe}

The trend has continued – a WIAW[ednesday] posted a day late.  My intentions are there but my follow-through is…  Missing.  Whomp, whomp.  Nevertheless, my eats recently have been tasty thanks to a few new products and combos :)

Cinnamon Vanilla French Toast


  • 2 egg whites
  • 1/4 cup Silk Light Vanilla Soymilk
  • stevia *to taste*
  • cinnamon


Whisk all of the ingredients in a medium bowl.  Dip individual slices of bread into the batter to coat each side.  Cook for approximately 2 minutes and flip to cook the second side for another 1-2 minutes or until light brown.  Stack and serve with your favorite toppings!  Makes about 3 slices.

whole grain wrap stuffed with spinach + bell pepper strips + TJs Chipotle Pepper Hummus + sliced avocado

3-Ingredient PB&J Trail Mix

TJs Joe’s O’s + lightly salted peanuts + raisins

*you could substitute any favorite cereal, I just used what we had in the pantry*

quick cooking tip: nuke the sweet potatoes in the microwave until tender before tossing them into a greased skillet

7-3 Dinner

The Fluffiest Scrambled Eggs

1 whole egg + 1 egg white + 1/4 cup cottage cheese + a dash of salt & pepper

Whisk all of the ingredients in a medium bowl.  Pour the batter into a greased pan and cover with a lid so the eggs can cook through.  When the eggs appear to be set on the bottom, fold in half like an omelet and cook for another minute on each side.  Serve as is or top with a shot of hot sauce + salsa [added after the picture].

WIAW: Wafflewich For the Win

It’s wa-wa-Wednesday!  I’m not sure why, but I’ve been in the best mood all week.  Maybe my endorphins are still flowing like crazy from Sunday’s race?

4-30 Charlie

Speaking of flowing, do y’all remember the group TLC? Rumor has it they’re getting back together!  I personally was a bigger fan of the boy bands back in the day [N’Sync, specifically Lance, swoon] but I also enjoyed singing about Waterfalls…  Go, go, Jason Waterfalls. 

Haha yes, I shamefully admit that for the longest time I thought they were singing about a man named Jason Waterfall.  Humor me and someone please tell me that you did too?!

Let’s keep things flowing and move onto my my eats from yesterday.  Holy YUM, yesterday was apparently a day full of salty + sweet and lots of tastiness – I ate at least one thing at every meal that made me wonder why I haven’t eaten ___ before.  All new eats are noted with an asterisk* :)
