Thinking Out Loud: OMG Tuna Fish Salad

1.  It seems like every time my local barista memorizes my drink order, it’s time for us to move.  I love walking up to the counter and having my drink already made, waiting for me.

2.  Speaking of coffee – are all people that work at coffee shops called baristas or is that just at Starbucks?

3.  This week my students are so happy because I added CHARMS candies to the prize box.  They describe them as a mix between Light Sabers {aka Life Savers} and Starburst.  The red ones are supposedly the best, the white are the worst.

4.  At 7AM on Saturday morning I’ll be anxiously waiting at the starting line of the Rock ‘n’ Roll Half Marathon – my first half marathon of 2014!  I still haven’t written my race recap of the Reston 10 Miler…

5.  For Lent I gave up candy and soda, specifically gum and Diet Hansen’s {Cherry Vanilla Crème}.  I’m addicted.  I was going strong until Tuesday when I decided to make an exception for dark chocolate because, well, it’s basically a health food.  Read more about why including dark chocolate in your daily diet can actually be beneficial here.


6.  I’ve outlined three posts this week a – a recap of the Reston 10 Miler, a weekend recap for MIMM, and a handful of food pictures for WIAW…  But they’re still just drafts because I either fell asleep asleep with my computer on my lap or had to run out the door to a meeting before school and I didn’t have time to finish later.  Hopefully I step-up my game next week.

7.  I’ve had a serious hankering for tuna fish this week.  I packed it for lunch on Monday, again on Tuesday, made a tuna melt for dinner Tuesday night, and made another wrap for lunch yesterday.  All because I learned a little secret…  Tuna fish + hummus is a life changing combo.  With every bite I repeatedly said {to myself} “OMG.  This is so good!  OMG!  OMG!” so I’m calling it OMG Tuna Fish Salad.

OMG Tuna Fish Salad

Ingredients {serves 1}:

  • 1 small can of tuna fish
  • 2 tbsp hummus
  • 1 tsp honey mustard
  • 1/4 c shredded mozzarella cheese
  • 1 – 2 tbsp sundried tomatoes
  • seasoned salt *to taste*
  • black pepper *to taste*


In a medium bowl, flake the tuna into chunks.  Add the remaining ingredients and mix well.  Refrigerate if not eating right away.

10.  After my students finish their classwork or a quiz, I let them “play” with math flashcards to keep quiet until everyone is done.  On Monday one student started singing “Everyday I’m shuffling.  Everyday I’m shuffling.  Everyday I’m shuffling.” while shuffling his flashcards.  And then the other students joined in.  It was hilarious!

MIMM: Life Lately in Numbers

It’s always tough to get back into the blogging groove after missing a few days, or in this case, over a week.  Lots of things happen, lots of food is eaten, many miles are run, memories are made…  I don’t know where to start.

My 1st.  Last weekend my momma, my BFF’s mom, Ryan, and I went out to dinner.  We went to The Tavern {a local restaurant} and I tried my first buffalo burger.  It was good, but the conversation that lasted three hours was better.  I’m glad that Ryan and I are already married because he might have run after hearing about our childhood shenanigans.


3 jobs.  Within about a week I went from working part-time as a substitute teacher to working three jobs – elementary special ed teacher, tutor, and sales associate.  My days are long and we’ve eaten lots of random meals {or take-out} lately, but I’m really enjoying everything that’s going on in my life right now!


2nd, 3rd, and 4th.  After shuffling schedules for a few weeks, trying different combinations, my schedule is finally set.  I teach one class of each: 4th grade math, 4th grade science, 2nd grade math, and 3rd grade math.

7 students.  The number of students on my caseload.  I’m lucky, they’re all precious  Seriously.

3 meetings.  Every week I have at least three meetings before school, which means I’m out the door between 6:30 – 7AM.  Thank goodness for quick breakfasts and Starbucks.


50/50 split.  My school day is split 50/50 – half of the time I’m co-teaching in a general ed classroom {“inclusion”} and the other half I’m in my classroom working with a small group of students who need additional support {“pull-out”}.

3 miles.  Last Monday Sarah and I went to our first Monday Funday Runday at =PR= Fairfax Corner.  It was hosted by Brooks Running so we got to take their latest shoe {the Transcend} out for a three mile test run and were served root beer floats when we got back to the store.


Lots of hours.  I’m scheduled to work lots of hours at the running store this month – every Wednesday, most Fridays, and at least one weekend day.

1 post.  Last week I shared just one post, a guest post by Jenna about injury prevention {thank you Jenna!}.  This week I’ve got a couple of guest posts scheduled: a wheat-free, dairy-free muffin recipe on Wednesday and a career-related post on Friday…  Plus a few next week!  If you’d like to guest post, please send an email to

3 exams.  Two teaching exams and one running store exam means that there’s lots of studying to do!  Plus, studying middle school math to prep for tutoring.  Bring on the coffee, highlighters, and index cards.


10 miles.  Yesterday morning I ran the Reston 10 Miler!  I’ve run a few half marathons, but yesterday was my first official 10 miler.  Race recap coming later this week.

Too long.  I spend too long writing race recaps.  I type up my thoughts but then always go back and second guess myself {same is true for product reviews}.  I don’t want to leave anything out, don’t think I was thorough enough, think I rambled too much.  Hopefully I’ll get better with time.

At least one.  Truth: I’ve eaten at least one bag of PopCorners everyday for the past two weeks.  I’m addicted.  My favorite flavors are white cheddar and kettle.

2 inches.  After waiting way too long, I got a haircut yesterday.  I asked my stylist to for just a trim, but I think she chopped off about two inches.  I’m not hating it though…  My hair finally feels healthy again.  The blonde highlights last spring butchered my hair.

60 minutes.  Ryan had a 60-minute massage scheduled yesterday, but gave it up for me to take.  So sweet, love him!

Too many.  We had snow day number ?? today.  I can’t keep up.  The roads are still snowy and it’s supposed to be only 7* tonight so I have a feeling we’ll be home again tomorrow.  The laundry is clean, the bathrooms are shiny, I made a batch of meatballs, potatoes were roasted, {break & bake} cookies were baked…

Thinking Out Loud: 94 Years of Friendship

Last night I fell asleep while staring out the window, watching the snow fall and a dusting start to coat the ground…  This morning I woke up to a fluffy, white, winter wonderland!  I know that many people are eagerly awaiting for spring to spring {admittedly, I was too a couple of weeks ago}, but the snow is so beautiful and peaceful!

Thought #1:  Farmers are very smart people.  Their predictions were accurate this week…  I wonder if we’ll get a second snowstorm later this month?


Thought #2:  I’m curious if this nut butter really is “wow” worthy?


Thought #3:  Running in new sneakers is one of the best feelings.  Pure comfort and joy!


Thought #4:  We’re crazy no matter what.


Thought #5:  A wonderful Walmart find.  Except, I’m not allergic to chocolate…  Or diamonds.  *Cough, cough.*


Thought #6:  I don’t make egg {or chicken or tuna fish} salad often enough.  Peas and diced carrots/celery are my favorite veggies to mix-in.

Thought #8:  My BFF sent me this video this morning {read more about their story here}.  It immediately made my heart melt and makes me think of us when we’re 100-years-old!

Thought #9:  Breakfasts this weeks have all included cottage cheese + peanut butter + honey {sometimes raisins too}.  On top of pancakes, slathered on a bagel, or mixed into oatmeal – a delicious combo!


Thought #10:  I’m still so excited that it happened!  Good timing too, because now I’m paid regardless of whether we’re in school or at home for a snow day 😉
