Crushing on Teddie

Let me preface this post by saying that I’ve been awake since 2:30AM and I’m already on coffee numéro three so I’m not responsible for any of my rambles today.  Buttt, just because I hardly slept last night doesn’t mean that I’ll be a sourpuss today, I may just be a bit delusional and loopy come the afternoon.

While searching for “coffee” on Someecards I stumbled upon this gem…


Hm, I’m sure Magic Mike did have to drink a gallon of coffee after his “busy” nights – ah ha, now I see the connection 😉

By the way, what did y’all think of yesterday’s food themed post?  Too much?  Would y’all like more “recap” style posts?  I have been oh so kindly repeatedly reminded that I still need to recap our honeymoon – I will, soon, I promise.  Perhaps this weekend in honor of our 6-month wedding anniversary on Sunday?!  Holy moly, time has flown…  We still need to sort through our wedding pictures and create our album.  We will, soon, I promise!

Moving on to today’s focus: food, specifically Tuesday’s eats.

Hot Grain Cereal

I picked these up last week at TJ’s – definitely a different texture than straight up oats, but they’re still tasty & work well in my oatcakes


silky morning coffee [X a few] is a must


I’ve been hardcore crushing on Super Chunky Teddie PB.  I’ve refused to share it with Ryan – he’s gotten ham sandwiches for 2 weeks straight. reason for my selfishness – because I’m running out & have heard that it can be hard to find so I’m keep my fingers [& toes] crossed that our local Whole Foods has it…


cinnamon hazelnut oatcakes [similar to this recipe but swap hazelnut for salted caramel, half the flour, & add ¼ cup oats] were tasty, but all I really wanted were the toppings 


finally found a bag big enough for my lunch.  no judgement, I get hangry when I don’t eat, don’t you?

WIAW: Peanut Butter Chocolate Pancakes {Recipe}

Yesterday’s personal day was super productive.  I dusted and I vacuumed.  I washed and I dried.  I organized and I rearranged.  I baked and I cooked.  I ran and I supported.  And on top of all of that, I successfully fulfilled not just one, but all of my cravings as advised by the Elf for Health challenge…  And evidently I was craving lots of peanutty, potatoey, and pizzafied items 😛  Remember those frozen sweet potatoes I found at TJ’s?  I cannot. stop. eating. them.

vanilla Silk cappuccino

Peanut Butter Chocolate Pancakes


  • 2 tablespoons white whole wheat flour
  • 2 tablespoons peanut flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon stevia
  • 1 teaspoon baking soda
  • 2 egg whites {or 1 whole egg}
  • 2 – 4 tablespoons water


  1. In a bowl, add all of the ingredients and whisk until the batter is smooth.  Note: I add the dry ingredients first, then the wet ingredients.
  2. Spray a medium-sized skillet with non-stick cooking spray and place over medium heat.
  3. For each pancake, spoon 2 generous tablespoons of batter into the pan.  Cook each pancake until a few bubbles form and burst, approximately 1 to 2 minutes.
  4. Flip the pancakes with a spatula and cook until browned on the underside, 1 to 2 more minutes.
  5. Serve the stack of ‘cakes with your favorite toppings and enjoy!

P.S.  Today is National Oatmeal Muffin Day [I don’t make this stuff up]…  I already dug into a delicious stack of pancakes [obvi] when I found out, but maybe I’ll have some dessert style oats for dinner?

Today…  #elf4Health 12/19 Day 24:  Bake cookies!  I can’t reveal what I made because I’m sending them to my Secret Santa blend but I did taste test [to make sure they’re not poisonous or anything] and think they turned out pretty tasty!

Tomorrow…  #elf4Health 12/20 Day 25:  Make a casserole for dinner tonight.  Hmm, a pizzafied casserole?  Mexican casserole?  Tuna casserole?

WIAW: Letting the Pictures Talk

Howdy, howdy happy hump day!  I woke up at 4AM today [for no reason] and have been go-go-go ever since so my brain is a bit fried and my belly is rumbling for dinner…  I’ll let the pictures do the talkin’ 😉

Charlie loves Chobani [licking the lid]

Breakfast: apple,  eggs + mozzarella + TJ’s Greek yogurt guacamole + salsa, and Van’s waffles + PB2 frosting + apple butter + raisins

Lunch: fresh veggie salad, pear, TJ’s frozen pizza, and a Semi-Homemade Cho Brownie

Snack: apple and a parfait with sweetened Cho + super spicy pumpkin seeds + kamut puffs

Pickles while prepping dinner [and a make-shift band aid]

Dinner: veggie packed spicy salad, TJ’s chicken veggie dumplings with a spicy peanut sauce, and rice cakes + hummus + TJ’s Greek yogurt guacamole

Dessert: a big bowl of mixed cereals + shredded unsweetened coconut + Silk Light Vanilla soymilk
